Quinchoncho gehört zu den Hülsenfrüchten, die in der menschlichen Ernährung eine wichtige Rolle spielen, da sie eine Quelle von Proteinen, Ballaststoffen, bestimmten Mineralien und Vitaminen sind. Der Verzehr von Quinchoncho wird jedoch durch das Vorhandensein von nährstoffschädigenden Bestandteilen eingeschränkt. Ziel dieser Untersuchung war es daher, die Auswirkungen des Einweichens und der Keimdauer auf die chemische Zusammensetzung, die Polyphenole und die Phytinsäure in Chinchoncho-Samenmehl zu bewerten.
