El objetivo principal de este libro es satisfacer la creciente demanda de información y conocimientos que tanto dentro del sector, como desde el público en general, se solicita sobre el jamón ibérico, y que ninguna publicación ha atendido hasta ahora, abarcando todos los eslabones de la cadena que va “desde la dehesa hasta la mesa”. El autor, Jesús Ventanas, es, desde 1990, Catedrático de Tecnología de Alimentos en la Facultad de Veterinaria de Cáceres, donde desarrolla una intensa actividad científica y académica orientada hacia el estudio de la Bioquímica y la Tecnología de los productos cárnicos (en concreto del jamón ibérico).
